BEST ANSWER: The Union Force Snowboard Bindings are a carry over for the 2017 season. They are constructed with the same components.
Size 11 boot, L or M?

For these bindings you will want the L size for your 11 boot.
If my boots are 7.5 would it fit medium 8-11 or should I go smaller size for union boots?

Physically it would work, but this set up will not give you the optimal performance or safety. I do think a size smaller binding will be better for you.
Has anyone had any problems with straps breaking in cold weather? Where I live it is usually -25 celcius and I want to make sure they will hold up in this weather. Thanks.

I will leave this available for peoples opinions, but in my experience Union bindings are some of the best made on the market.
So I wear a size 10 sims boot. Would you recommend medium or large from this binding?

If you feet are not growing go with the 'M'.
I wear a Burton size 12 boot, so would I need to get a large or medium set of these bindings?... also considering the weight difference for performance... I'm currently riding medium bindings

For a Men's 12 boot you will want a Burton 'L' binding.
I have a size 10 DC park series boot, would the medium or large size be better suited? My size runs between both ranges and I've read that the bindings can be a bit narrow

For your DC boots in a size 10, I would get the 'M' binding size... the performance will be better.
