Would these work with Sapient Voltage skis in 164cm size? I believe 90mm might work?

Yes those will work, the waist width on those skis is 86mm.

BEST ANSWER: Yes, the 100mm and 115mm will fit.
Would the 100mm fit the arctic edge sx100 skis?

Would the 90mm work on line step up skis? Iā€™m 5ā€™4ā€ 115lbs and go on easy blacks, blues and the terrain park. Would these bindings work?

yea... a 90mm brake will work great with the Stepup Skis.
