Great question! First off, wow you're a skinny guy. Secondly, I would recommend buying a board that at least reaches your chin and not pass your nose while standing up. Happy measuring.

The Rossignol Trickstick Amptek Snowboard is a blast to ride and it'd work great with the Flow Flites!

BEST ANSWER: It looks liek we only have a few Rossignol Trickstick Amptek Snowboards available.
I'm 6' tall and 174 lbs, intermediate skill level. What size do you recommend? 158 seems to be what the Rossignol website recommends but that seems on the long side. As a beginner I rode a 154. I'm concerned that I'm too heavy for the shorter board however.

BEST ANSWER: I'm 6' and 200 pounds and I use a 153. It's easier to maneuver, better for park riding.
Will bindings with the 3D disc work with this board? If not is there something I can buy so my bindings will mount on this?

The Trickstick from Rossignol uses the standard 4-hole mounting system, and will not work with the 3-D plates. There are 4-hole plates for many bindings, but I would need to know what bindings you have to further assist you (I am assuming Burton, but roughly what season).
What's the flex rating?

The Avalanche bindings are solid entry level bindings. This Trickstick is a bit more advanced than the bindings. Something like this maybe:
